Christmas recipe: Roasted red pepper and goats’ cheese salad

Keep your Christmas appetiser light and fuss-free. It’s a busy day and simplicity is the best bet. If you want to impress your guests and keep your cool, try this easy recipe of roasted red pepper and goats’ cheese salad.
A healthy vegetarian option, this salad only takes around 10 minutes to prepare so it’s the perfect choice for the busy hostess. The following suggestion serves 4.

Ingredients:
Two large red peppers
100g Goats’ cheese
A handful of pine kernels
1 bag of washed spinach leaves
Olive oil
Balsamic vinegar

Method:
1. Divide the washed spinach leaves on to the four plates and drizzle with balsamic vinegar.
2. Chop the red peppers and gently fry them in a little olive oil for around 10 minutes or until soft. Transfer on to a baking tray and crumble goats’ cheese over the top.
3. Grill the cheesy peppers for around five minutes, until the cheese starts to go golden
4. Whilst they’re browning, gently toss the pine kernels in the remaining olive oil.
5. Put the nuts, olive oil and pepper mix over the salad and serve.
