Beef or Chicken Fajitas

Beef or Chicken Fajitas
Ingredients:
1 kilo pounds steak
3 tablespoon fresh lime or lemon juice
2 teaspoon ground cumin
2 tablespoons oil
2 red onions, cut into 1/2-inch wedges
2 yellow/red/green bell peppers, cut into 1/2-inch strips
4 tablespoons mashed garlic
8 flour tortillas
Coarse salt and ground pepper
Directions:
1. Slice the steak in thin pieces. Place steak in a shallow dish; rub with lime juice, cumin, 1 teaspoon salt, and 1/4 teaspoon pepper. Cover, and let marinate at room temperature at least 20 minutes and up to 1 hour.
2. Heat some oil in a large skillet over high heat. SLOWLY add some strips at a time. Don’t add too much meat at once. Handful at a time for optimal cooking.Cook steak until browned. Take cooked meat and put into dish.
3. In the same skillet, heat remaining tablespoon oil over medium-high heat. Add garlic, onions, and peppers; season with salt, pepper and cumin. Cook, tossing frequently, until onions and peppers are beginning to soften, about 10 minutes.
5. Serve with onion mixture, warmed tortillas, and desired toppings such as Sour cream, salasa, shredded cheese and fresh cilantro.
*You can also use chicken breast for the beef. The longer you let the steak marinate, the more flavorful it will be.
